Pot Sticker Soup
A clean, vibrant broth with frozen pot stickers, crunchy vegetables, and a tangy hit of soy and lemon. On the table in under 15 minutes.
Ingredients
- 1 litre (4 cups) chicken broth
- 4 green onions, sliced
- 1 cup brussels sprouts, chopped
- 1 cup sugar snap peas or regular peas
- 16-20 frozen pot stickers (about 4-5 per person)
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- Bring the chicken broth to a boil in a large pot.
- Add the green onions and brussels sprouts.
- Add the sugar snaps or peas.
- Add the frozen pot stickers directly from frozen.
- Add the lemon juice and soy sauce.
- Bring back to a simmer and cook until the pot stickers are heated through, about 5 minutes.
- Taste and season. Serve immediately.
Notes
- Pot stickers: Any flavour works — pork, chicken, vegetable. Use whatever you have in the freezer.
- Vegetables: Swap in whatever you have — thinly sliced mushrooms, baby spinach, bok choy, and shredded cabbage all work well.
- Lemon: The lemon juice brightens the whole bowl — don’t skip it.
- Quick weeknight dinner: This genuinely takes about 12 minutes start to finish. Keep pot stickers in the freezer for this recipe.
