Filet Tips & Mushrooms

Tender steak tips seared in a hot skillet, then finished in a rich beer and butter sauce with mushrooms. Fast, impressive, and deeply satisfying.

Ingredients

  • 2 lb steak tips, at room temperature
  • 1/2 lb mushrooms, sliced
  • 1/2 can (6 oz) beer
  • 1/2 stick (4 tablespoons) butter
  • Fresh parsley, chopped
  • Salt and pepper

Instructions

  1. Season the steak tips generously with salt and pepper.
  2. Heat a cast iron skillet over very high heat until smoking. Sear the steak tips for about 2 minutes, then remove and set aside.
  3. Add the mushrooms to the same pan and cook for 5 minutes, stirring occasionally, until browned.
  4. Pour in the beer and cook for a few minutes, scraping up any browned bits from the bottom of the pan.
  5. Add the butter and whisk continuously until the sauce thickens and becomes glossy.
  6. Return the steak to the pan and cook until it reaches an internal temperature of 146°F for medium.
  7. Sprinkle with fresh parsley, season to taste, and serve immediately.
  8. Good with broccoli and sliced fried potatoes.

Notes

  • Room temperature steak: Taking the meat out of the fridge 30 minutes before cooking ensures a more even sear.
  • Beer choice: A malty amber or brown ale works best in the sauce — avoid very hoppy IPAs.
  • Southwest Marinade: If you want to marinate the steak first, mix 1 tsp each of oregano, garlic salt, cumin, and black pepper with 1/2 tsp chili powder, a splash of apple cider vinegar, and olive oil. Marinate for at least 1 hour.
