Filet Tips & Mushrooms
Tender steak tips seared in a hot skillet, then finished in a rich beer and butter sauce with mushrooms. Fast, impressive, and deeply satisfying.
Ingredients
- 2 lb steak tips, at room temperature
- 1/2 lb mushrooms, sliced
- 1/2 can (6 oz) beer
- 1/2 stick (4 tablespoons) butter
- Fresh parsley, chopped
- Salt and pepper
Instructions
- Season the steak tips generously with salt and pepper.
- Heat a cast iron skillet over very high heat until smoking. Sear the steak tips for about 2 minutes, then remove and set aside.
- Add the mushrooms to the same pan and cook for 5 minutes, stirring occasionally, until browned.
- Pour in the beer and cook for a few minutes, scraping up any browned bits from the bottom of the pan.
- Add the butter and whisk continuously until the sauce thickens and becomes glossy.
- Return the steak to the pan and cook until it reaches an internal temperature of 146°F for medium.
- Sprinkle with fresh parsley, season to taste, and serve immediately.
- Good with broccoli and sliced fried potatoes.
Notes
- Room temperature steak: Taking the meat out of the fridge 30 minutes before cooking ensures a more even sear.
- Beer choice: A malty amber or brown ale works best in the sauce — avoid very hoppy IPAs.
- Southwest Marinade: If you want to marinate the steak first, mix 1 tsp each of oregano, garlic salt, cumin, and black pepper with 1/2 tsp chili powder, a splash of apple cider vinegar, and olive oil. Marinate for at least 1 hour.
