Beef & Broccoli
Tender sirloin strips stir-fried with broccoli in a savory sauce of soy, oyster sauce, ginger, and garlic. A classic takeout favourite made at home in 15 minutes.
Ingredients
- 1 lb sirloin beef strips
- 1 head broccoli, cut into small florets
- 1 1/2 cups rice
- Sesame or peanut oil for frying

- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon tomato ketchup
- 2 cloves garlic, crushed
- 1 1/2 inch piece of fresh ginger, grated
- 1 tablespoon white wine vinegar

- Spring onions, sliced
Instructions
- Cook the rice according to your preferred method.
- Mix together all the sauce ingredients in a bowl and set aside.
- Bring a pan of water to the boil. Blanch the broccoli florets for 2-3 minutes until just tender but still bright green. Drain.
- Heat a wok or large skillet over very high heat. Add the oil.
- Stir-fry the beef strips for about 3 minutes until browned and just cooked through.
- Pour the sauce over the beef and stir to coat.
- Add the cooked broccoli and toss everything together.
- Serve immediately over rice, scattered with spring onions.
Notes
- Oil note: The original recipe notes that sesame oil burns at high heat — peanut oil is safer for stir-frying and gives great flavour. Sesame oil can be added as a finishing drizzle instead.
- Beef: Slice the beef across the grain for the most tender result. Thin strips (about 1/4 inch) cook fast and stay tender.
- Hot wok: The key to stir-fry is very high heat. Wait until the wok is smoking before adding the beef.
- Oyster sauce: The secret weapon here — it adds a depth and sweetness that soy sauce alone can’t match.
